Weekend Kitchen: Raspberry Slab Pie

Way back in July I went raspberry picking.  I've had a ton of raspberries in my freezer since then so this weekend I made raspberry slab pie. I found the recipe this summer on Smitten Kitchen (one of my absolute favorite food blogs). Smitten referred to this as a 'giant pop tart' and she did not disappoint! The original recipe is for a sour cherry slab pie, but any fruit pie filling can be used. For the complete recipe go here.

This was really good - I definitely will be making it again. I think a blueberry one would be delish!

  1. Ooh, I got a shout-out for the citrus squeezer! The poptart looks good, although slightly larger than my morning portion. I sure do love the rounded corners on the pictures!!
