Weekend Kitchen: Mixed Baby Greens with Eggplant

I make this salad quite a bit in the summer.  It might look and sound a little strange but it's really good!
- Mixed baby greens
- Italian style bread crumbs
- Eggplant (a narrow one is best)
- Red & yellow bell peppers
- Cherry tomatoes
- Goat cheese crumbles
- Olive oil & balsamic vinegar
- 1 egg
1/4 c. milk
Whisk egg and milk in bowl.  Slice eggplant.  Coat in egg/milk mixture and then coat with bread crumbs.
Drizzle a tablespoon or two in fry pan and cook eggplant.  A few minutes on each side is all it takes to cook them up.
While eggplant is cooking prepare greens & toppings.
Look at that pretty lettuce!
Drizzle salad with olive oil and balsamic vinegar.
Top salad with eggplant & enjoy!  The warm eggplant melts the goat cheese and tastes delicious.  Now I'm hungry!

Oh my gosh, that looks delicious! I've never thought to put breaded eggplant on a salad but I bet it's amazing with the goat cheese. Mmmm...

That really looks and sounds soooo good! Thanks for sharing this - I'm ALWAYS looking for new salad ideas aside from just lettuce and your typical carrots, tomatoes, cucumber and/or onions. I will definitely be trying this one out!

OH my goodness! That is my perfect meal. I adore eggplant! I've got it growing in my garden. As soon as I get a ripe one, I'm making this. So excited!
